Onto a (much) lighter note…As promised, I want to give you some ideas for breakfast tomorrow!
If there’s something that not a lot of people know about me, it’s the fact that I love breakfast. A. Lot. I love to cook it, bake it and go out for it.
In the past few months, I’ve been making a big breakfast almost every Saturday. What I’ve come up with is, in my opinion, the perfect weekend breakfast.
On the menu:
- Breakfast potatoes with onions and sour cream
- Poached Eggs
- Bacon (or sausage, or tofu, or whatever floats your boat)
Here is the way it goes down at the house on Saturday mornings:
First, get your potatoes going. Our fave are multi-colored fingerling potatoes cut into small rounds.
TIP: After they’re sliced, put them on a plate and cover with a damp towel. Nuke them in the microwave for 2-3 minutes. This partially cooks them and makes frying them up quick! Don’t forget to add some sliced onions…yumm! Fry in about 3-5 Tbsp oil, flipping regularly until they’re golden brown.
Next, get your bacon cooking. I really like to put it on a rack on top of a cookie sheet and bake it in the oven until crisp. This really decreases the grease.
Finally, when everything is just about ready…poach your eggs. Sound scary? It’s not! I learned how to poach an egg from Jenna, at Eat, Live, Run. You can find her “how to”, here.
Don’t fret…it’s supposed to look like this! I promise, if you follow Jenna’s advise, it’s almost fool-proof! SOOO DELICIOUS!
When all is said and done, it all comes together a little like this:
Crispy breakfast potatoes.
Don’t forget a little sour cream and hot sauce!
Perfect Poached Eggs with fresh basil, if you have it!
Ours come from our tiny little herb pot outside. It’s micro-basil.
Tiny little leaves, with more flavor than anything I’ve ever bought at the store. BONUS: Micro-basil is pretty much already chopped up…all you have to do it pinch it off the stem!
We’re almost there!
There you have it! A slice of bacon tops off the perfect breakfast in under half an hour!
