I am so ridiculously happy to be able to say…Happy Friday! Whoo hoo!
As your Breakfast Feast Friday post today, I give you another variation of my all-time favorite breakfast!
This is truly, the perfect weekend breakfast. So delicious! You can find how to build it, here.
For this variation, I cut the potatoes into small chunks instead of rounds. It gave it an entirely different texture…really amazing! I also sliced up an avocado and threw it into the mix. Creamy, fresh, perfect!
Top it with a dab of sour cream, and some hot sauce, and you’ve got yourself a plate of amazingness!
That’s really all I’ve got for you today. I feel like I should leave you with some amazing tid-bid of enlightenment, but the truth is…it’s been a really intense week, and I’ve got nothin’. Notta. Ze-ro.
It’s ok though, my favorite yoga instructor always says that if we were always filled-up…we wouldn’t need to be active in things that fill us up. We’d be stuck in the Status Quo; balanced but blah. It’s really important to be mentally empty sometimes, so we can start fresh and fill-up again. That’s where I’m at today. Mentally empty…and ready to be filled!
